Cacciatore salami is made in compliance with a traditional recipe. Ingredients used are only high quality cuts of Italian pork meat, salt, pepper and traditionally a pinch of garlic. At the end of the ageing period, the salami must possess a well-defined aspect, taste and chemical-physical
- small size (usually about 200 g);
- a slightly curved shape;
- a subtle, non-acidic flavour, ruby red colour etc.
Compliance with the Disciplinary Code is guaranteed by INEQ-Istituto Nord Est Qualità, an independent monitoring body authorized by the Ministry for Agricultural, Food and Forestry Policies.
