Today, as in the past, processing the product requires a great deal of expertise.

Each Consortium company is controlled by an independent body that ensures the compliance of its production process with the Specifications.

This control body – IFCQ Certificazioni – carries out inspections on the production process and checks the product through a control plan approved by the Ministry of Agricultural Food and Forestry Policies (Mipaaf) which oversees everything.
