The main characteristics of this PDO are linked to the certification of Protected Designation of Origin: only Italian raw materials are used, strictly in accordance with the traditional recipe for the salami carried by hunters in their backpacks during hunting trips. Therefore, the sole ingredients are noble cuts of pork, salt, pepper and, traditionally, a pinch of garlic, but it is never strongly spicy.

At the end of the curing process, lasting at least 10 days, the salami must have a well-defined appearance, taste and chemical-physical properties: small in size (normally about 200 grams, up to a maximum of 350 grams); a slightly curved shape; a compact and non-elastic consistency. The slice is compact and homogeneous when cut. It has a uniform ruby colour, with well-distributed grains of fat, and a sweet, delicate taste that is never sour.
